Raspberry-Pecan Bars

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 12 Tbsp (1 1/2 sticks) unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 cup (4 ounces) chopped pecans
  • 1 jar American Spoon® Red Raspberry Preserves Add to Shopping Cart
  • Preheat oven to 325°F. Butter an 11″ x 7″ baking pan.
  • In medium-sized bowl, stir together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, with an electric mixer, beat the butter until creamy – about 1 minute. Gradually add the sugars and continue to beat until light and fluffy. Beat in the egg yolks and vanilla.
  • With a spoon, stir in the dry ingredients. Reserve 3 tablespoons pecans and stir in the remainder.
  • Press about half of the dough evenly in the bottom of the pan. Spread with the preserves. Crumble the rest of the dough evenly over the top. Sprinkle with the reserved pecans.
  • Bake in the center of the oven for 50 to 60 minutes, until golden brown and firm. Cool in the pan on a rack.

Note: Flour your hands when pressing and crumbling dough.
