Cherry Peach Chicken
- 3 Tbsp olive oil
- 2 split boneless, skinless chicken breasts
- 1 green pepper cut into strips
- 1/2 lb mushrooms sliced
- 1 medium onion sliced
- 1/4 cup sweet vermouth
- 1 jar American Spoon® Cherry Peach Salsa Add to Shopping Cart
- 1 oz chopped fresh basil leaves

In a large sauté pan, sauté chicken breasts and onion in olive oil until lightly browned. Remove chicken breasts and set aside. Add the other vegetables to the pan and sauté for several minutes.
Return chicken breasts to the pan and pour the vermouth and American Spoon® Cherry Peach Salsa over and around them. Simmer the chicken and vegetables in the salsa mixture for several more minutes or until the chicken is cooked to your taste.
Turn off heat; stir the fresh basil into the mixture and serve immediately.
